Disruption in dairy: how the value chain can be faster, shorter and more transparent

After years of standardization, scaling up, cost reduction and quality improvement in the dairy industry, we can also return to a smaller scale.
There are currently four mini-milk factories in the Netherlands in the farm, in which the milk goes from grass to glass within 24 hours.
A new value chain in which the individual farmer and cow are unique again. This offers an opportunity to make optimal use of new techniques that have been developed in recent years in both the food processing industry and also on the farm.
